Students from Florida International University’s Chaplin School of Hospitality & Tourism Management recently traveled to Puerto Rico for a hands-on educational experience focused on the rum industry. The trip was organized in partnership with the school’s Bacardi Center of Excellence.
During their visit, 11 students explored several key sites related to rum production and beverage management. Their itinerary included a tour of San Juan Distillers, where owner José R. Álvarez Reyes and his son, José Roberto Álvarez Jr., led them through the facility. The distillery employs about 20 workers and emphasizes craftsmanship and respect for heritage in its operations.
The group also visited Casa Bacardi in Cataño, known as the world’s largest rum distillery. As part of their affiliation with FIU’s Bacardi Center of Excellence, students were given access to areas such as the laboratory, where they learned about yeast used in creating Bacardi’s signature rum.
Bacardi has its North American headquarters in Miami and supports Chaplin School students through an ongoing partnership that promotes education, entrepreneurship, and sustainability within the spirits industry.
In addition to learning about production processes, students spent time at La Factoria in San Juan—a cocktail bar recognized globally for its mixology. The bar has been featured multiple times on The World’s 50 Best Bars list due to its innovative approach and diverse atmosphere throughout different rooms during evening hours.
According to a recent Spirits Market Report, the global spirits market is valued at $650 billion and is projected to reach $780 billion by 2030.
Reflecting on their experiences, participants highlighted how immersive learning opportunities help them understand both tradition and innovation within hospitality careers. They noted that true hospitality involves storytelling, building connections, and honoring tradition—skills they plan to carry forward into their professional lives.
