FIU hosted a major community event on Saturday, combining a large-scale pig roast with its annual football rivalry game. The university’s tailgate event drew over 80 culinary teams who participated in a cook-off centered around whole hog dishes, reflecting South Florida’s food traditions. The College of Business was named Grand Champions in the competition.
Attendees sampled lechĂłn served in various styles, including slider buns and tacos, accompanied by sides like maduros, yuca, and congrĂ. The day culminated with FIU’s football team defeating FAU 38-28 in the Shula Bowl.
During halftime, alumni who have made significant contributions to FIU athletics were recognized. These five individuals had been inducted into the Athletics Hall of Fame the previous evening. The honorees were Munga Eketebi ’88 (men’s soccer player and coach), T.Y. Hilton ’13 (football), Karl Kremser ’87 (men’s soccer coach), Tayna Lawrence ’98 (women’s track), and Cindy Russo ’93 (women’s basketball coach).
“Panther Nation enjoyed another moment of pride during half-time as a group of alumni accepted much-deserved recognition of their winning contributions to FIU’s sports program over the years, whether as student-athletes or coaches,” according to the announcement.
The event brought together students, alumni, and members of the local community for both culinary and athletic celebrations.
